Ricotta and Corn Stuffed Mushrooms

  • 5 Button mushrooms (stems removed)
  • 1 tbsp low fat ricotta
  • 1 tbsp creamed corn
  • 10 grams parmesan cheese
  • 1 chive

Method

  1. Preheat oven to 200 degrees
  2. Mix corn ricotta and chopped chives together
  3. Put mixture into mushrooms
  4. Top with parmesan
  5. Bake in oven for 10-15 mins until cheese is browned

Method

  1. Mix in bowl, spray oil pan, pour mixture into a rounded shape. Rip and flatten. Remove when cooked (3min first side , 2mins second)
  2. Add salt and pepper and lemon to taste enjoy

  • 1 large zucchini grated
  • 2 shallots finely chopped
  • 1/2 cup sesame seeds
  • 2tbsp hot chilli paste

Method

  1. Preheat the oven 180 degrees
  2. Mix all ingredient and roll into bit size balls
  3. Place bits into miniature muffin tin
  4. Bake for 15 mins until starting to go golden brown, then turn over and bake for another 15mins
  5. serve with coriander to garnish and chilli sauce or soy sauce

San Choy Bow

Method

  2. Cook mushrooms in pan for 5mins until soft
  3. Put almonds, roast beef, soy sauce and mushrooms in food processor. Whiz until roughly chopped or a consistency you like
  4. Spoon out into the lettuce leaves
